HOW DO I KEEP MY BREAD FRESH?
Journeyman recommends keeping bread on the kitchen counter in the paper bag in which it was delivered. This allows the bread to "breathe" and keeps the crust crisp. Placing bread in a plastic bag will soften the crust and eventually lead to moldy bread. Placing bread in the refrigerator is not recommended.
CAN I FREEZE MY BREAD?
Absolutely. Remove the bread from the paper bag and place in a tightly sealed plastic bag with as much air removed as possible. (Many people slice the bread in advance and then take one or two slices out of the freezer when they're preparing a sandwich or toast.) If bread is wrapped tightly, it will last indefinitely in the freezer.
HOW DO I REVIVE MY BREAD?
To revive a crispy crust, place the bread in a 175 degree oven for 15 minutes. You can only do this one or two times before the bread realizes something is up and will harden up rather than crisp.
