Flammekueche or Tarte Flambée is a classic flatbread from Alsace, the French region which shares a border with Germany. Creamy, savory, and with the added perfume of lemon and nutmeg, it’s a comforting and intensely satisfying pizza you’ll return to again and again.

Ingredients
1 Journeyman Pizza Dough
1/2 cup Luna Grown Onion Jam
6 oz. Creme Fraiche
Zest of 1 large Lemon
2 oz Lardon, or (about 4 strips) thick-cut bacon, cut cross-wise into strips
Whole Nutmeg
Salt & Pepper
Directions
Set baking stone on middle rack and preheat oven to 500ºF.
While the oven heats, mix together the onion jam, creme fraiche, lemon zest, 1/4 teaspoon salt, 1/4 teaspoon pepper, and a very generous grating of nutmeg.
Prep pizza dough, either two round or one tray, as discussed here. Spread evenly with creme fraiche/onion mixture and sprinkle with lardons.
Bake the pizza, turning as necessary for even browning, until the crust is golden and the topping has browned in spots, 6 to 8 minutes. Let cool slightly, finish with another grating of nutmeg, slice and serve.
